摘要
目的:了解大理州市售食品中食源性致病菌污染情况,为食品安全风险预警及制定食品安全措施提供科学依据。方法:依据《国家食品污染物和有害因素风险监测工作手册》要求对农贸市场、超市、餐饮店等售卖的不同种类样品进行致病菌监测分析。结果:2018—2021年共检测样品586份,有56份检出食源性致病菌,总检出率为9.56%。结论:大理州市售食品存在不同程度的食源性致病菌污染,食品监管部门应对致病菌检出率较高、污染较严重的水产品及肉与肉制品等采取针对性措施。
Objective:To understand the contamination of food-borne pathogens in food sold in Dali city,and provide scientific basis for food safety risk early warning and formulation of food safety measures.Method:According to the requirements of the National Work Manual for Risk Monitoring of Food Contaminants and Harmful Factors,pathogenic bacteria monitoring and analysis of different types of food sold in farmer’s markets,supermarkets,restaurants,and online stores were carried out.Result:A total of 586 samples were tested from 2018 to 2021,and 56 of them were detected with food-borne pathogens,with a total detection rate of 9.56%.Conclusion:Foods sold in Dali city are contaminated with food-borne pathogens to varying degrees.Food supervision departments should take targeted measures for aquatic products,meat and meat products with a high detection rate of pathogens and serious pollution.
