摘要
目的了解广州市售食用淀粉真菌毒素与铅污染状况,分析食用淀粉安全风险。方法2020年在广州市11个区的超市和肉菜市场采集不同包装形态的玉米淀粉和小麦淀粉样品66份,使用多功能净化柱净化-柱后衍生高效液相色谱法测定黄曲霉毒素B1残留量,高效液相色谱-质谱法测定脱氧雪腐镰刀菌烯醇和玉米赤霉烯酮残留量,使用ICP-MS法测定铅含量。结果49份玉米淀粉样品中有8份样品检出黄曲霉毒素B1,检出率为16.33%,检出值范围为0.33~1.40μg/kg,但在小麦淀粉样品中未检出。17份小麦淀粉样品中有1份检出脱氧雪腐镰刀菌烯醇,检出率为5.88%,检出值为147μg/kg,但在玉米淀粉样品中未检出。49份玉米淀粉样品中有12份玉米赤酶烯酮,检出率为24.49%,检出值范围为21~143μg/kg;17份小麦淀粉样品中有1份样品检出玉米赤酶烯酮,检出率为5.88%,检出值为52μg/kg。市售食用淀粉中铅检出值范围为0.002~0.077 mg/kg,平均值为0.0136 mg/kg,中位数为0.0090 mg/kg,检出率为89.39%(59/66),无样品铅超标。结论广州市售玉米淀粉中玉米赤霉烯酮检出值较高,残留情况应引起关注。玉米淀粉和小麦淀粉中铅、黄曲霉毒素B1和脱氧雪腐镰刀菌烯醇检出值均较低。
Objective To understand the contamination of lead and mycotoxin in commercially available edible starch in Guangzhou City,analyze the safety risk of edible starch.Methods Totally 66 samples of corn starch and wheat starch with different packages were collected from supermarkets and meat and vegetable markets in 11 districts of Guangzhou City in 2020.The aflatoxin B1 residue was determined by the multifunctional purification column with post column derivatization high performance liquid chromatography.The residues of deoxynivalenol and zearalenone were determined by the high performance liquid chromatography-mass spectrometry.The lead content was determined by ICP-MS.Results The aflatoxin B1 was detected in8 of 49 corn starch samples,with the detection rate of 16.33%,and the range of detection values was 0.33-1.40μg/kg,but it was not detected in wheat starch samples.The deoxynivalenol was detected in 1 of 17 wheat starch samples,with the detection rate of5.88%,and the detection values was 147μg/kg,but it was not detected in corn starch samples.The zearalenone was detected in12 of 49 corn starch samples,with the detection rate of 24.49%,and the range of detection values was 21-143μg/kg,while that was detected in 1 of 17 wheat starch samples,with the detection rate of 5.88%,and the detection values was 52μg/kg.The range of detection values of lead in commercially available edible starch was 0.002-0.077 mg/kg,with an average of 0.0136 mg/kg and median of 0.0090 mg/kg,the detection rate was 89.39%(59/66),and there was no sample with lead exceeding the standard.Conclusions The detection value of zearalenone is high in commercially available corn starch in Guangzhou City,and the residues should be of concern.The detection values of lead,aflatoxin B1 and deoxynivalenol are low in corn starch and wheat starch.
