膨化食品中过氧化值含量的测量不确定度评定

摘要 目的:应用GUM法评定膨化食品中过氧化值含量的测量不确定度。方法:通过建立滴定法测定膨化食品中油脂过氧化值含量的测量模型,计算测定过程中各分量的标准不确定度和相对不确定度,对测定结果的不确定度来源及相对贡献进行比较与评定。结果:本次评定不确定度主要来源于称样量引入的不确定度、硫代硫酸钠滴定溶液引入的不确定度、滴定体积引入的不确定度和样品重复性引入的不确定度。当膨化食品中过氧化值的含量0.3184 g/100 g时,其扩展不确定度为0.0028 g/100 g(包含因子k=2)。结论:测量不确定度中重复性不确定度的相对贡献最多,样品滴定体积不确定度的相对贡献最少。 Objective:To evaluate the measurement uncertainty of peroxide value content in puffed food by gum method.Method:The measurement model for the determination of lipid peroxide value in puffed food by titration was established,the standard uncertainty and relative uncertainty of each component in the determination process were calculated,and the source of uncertainty and relative contribution of the determination results were compared and evaluated.Result:The uncertainty of this evaluation mainly comes from the uncertainty introduced by sample weighing,sodium thiosulfate titration solution,titration volume and sample repeatability.When the content of peroxide value in puffed food is 0.3184 g/100 g,the expanded uncertainty is 0.0028 g/100 g(including factor k=2).Conclusion:In the measurement uncertainty,the relative contribution of repeatability uncertainty is the most,and the relative contribution of sample titration volume uncertainty is the least.
