摘要
目的:通过模拟日常生活中烹饪米饭前淘洗大米过程中大米中3种重金属含量的变化情况,找到淘洗大米的最佳条件。方法:采集重金属含量较高的大米样品,模拟日常烹饪过程中的淘洗条件,研究淘洗过程中3种重金属的变化规律。结果:铬、砷、镉的迁移速率在浸泡1 h和超声波洗涤1次时,均大于25.00%,以超声波洗涤3次、浸泡8 h为终点,铬、砷、镉的迁移量分别是62.16%、61.23%和52.16%。结论:普通大米在烹饪前浸泡1 h并进行1次淘洗,可有效去除一部分重金属元素,若大米中重金属含量较高可酌情延长浸泡时长和增加淘洗次数。
Objective:By simulating the changes in the content of three heavy metals in rice in the process of cooking rice before meals in daily life,find the best condition for washing rice.Method:Collect rice samples with high heavy metal content,simulate the washing conditions in the daily cooking process,and study the laws of three heavy metals in the washing process.Result:When the migration rate of Cr,As,and Cd was washed 1 h and ultrasonic washing once,it was greater than 25.00%.The ultrasonic washing three times and soaking 8 h as the end,the migration of Cr,As,and Cd was 62.16%,61.23%,and 52.16%,respectively.Conclusion:Ordinary rice is soaked for 1 h before cooking and is washed once,which can effectively remove some heavy metal elements.If the heavy metal content in rice is high,the soaking time can be extended and the washing times can be increased as appropriate.
