摘要
以沙葱精油为芯材,β-环糊精和阿拉伯胶为壁材制备沙葱精油微胶囊,以包埋率为评价指标,通过单因素和响应面试验研究沙葱精油微胶囊的最佳工艺条件,并评价沙葱精油微胶囊的抗氧化活性和抑菌性。结果表明:沙葱精油微胶囊的最佳制备工艺条件为壁材质量比3∶1、壁芯质量比4∶1、搅拌时间1 h、搅拌温度50℃,在此条件下的包埋率为(86.22±1.07)%。此工艺制备的沙葱精油微胶囊具有一定的抗氧化能力,当微胶囊质量浓度为12 mg/mL时,对DPPH·和ABTS^(+)·的清除率分别达到(80.03±2.84)%、(70.70±1.79)%;沙葱精油微胶囊对金黄色葡萄球菌和大肠杆菌具有较好的抑菌效果,且对金黄色葡萄球菌的抑菌效果优于对大肠杆菌的抑菌效果。因此,沙葱精油微胶囊具有较高的应用价值。
With Allium mongolicum Regel essential oil as the core material,Allium mongolicum Regel essential oil microcapsules were prepared withβ-cyclodextrin and Arabic gum as wall materials.Taking the embedding rate as the evaluation index,the optimal technological conditions of Allium mongolicum Regel essential oil microcapsules were studied through single factor and response surface tests,and the antioxidant activity and antibacterial activity of Allium mongolicum Regel essential oil microcapsules were evaluated.The results showed that the best preparation conditions of Allium mongolicum Regel essential oil microcapsule were wall material mass ratio 3∶1,wall core mass ratio 4∶1,stirring time 1 h,stirring temperature 50℃.Under these conditions,the embedding rate was(86.22±1.07)%.The microencapsulation of Allium mongolicum Regel essential oil prepared by this process had certain antioxidant capacity.When the mass concentration of the microencapsulation was 12 mg/mL,the clearance rates of DPPH·and ABTS^(+)·reached(80.03±2.84)%and(70.70±1.79)%,respectively.Allium mongolicum Regelessentialoil microcapsule had good antibacterial effect on Staphylococcus aureus and Escherichia coli,and its antibacterial effect on Staphylococcus aureus was better than that on Escherichia coli.Therefore,Allium mongolicum Regelessentialoil microcapsules have high application value.
