不同性别洪江雪峰乌骨鸡腿肌肉品质的比较分析 被引量:3

Comparative Analysis on Meat Quality of Leg Muscle in Hongjiang Xuefeng Black-bone Chicken

摘要 为研究性别对洪江雪峰乌骨鸡腿肌肉品质的影响,随机挑选24只健康、体重基本一致的180日龄洪江雪峰乌骨鸡(公母各12只)进行屠宰,并对腿肌的滴水损失、剪切力、失水率、肉色、pH、粗蛋白、粗脂肪、水分、粗灰分、肌苷酸、氨基酸、脂肪酸、铁、铜、锌、硒等指标进行测定分析。结果显示:洪江雪峰乌骨鸡公鸡腿肌的剪切力显著高于母鸡(P<0.05),母鸡的亮度值和pH显著高于公鸡(P<0.05)。公鸡腿肌的水分含量显著高于母鸡(P<0.05),母鸡腿肌粗脂肪含量显著高于公鸡(P<0.05);公鸡腿肌中铁和锌含量显著高于母鸡(P<0.05),母鸡硒含量显著高于公鸡(P<0.05);母鸡腿肌半胱氨酸含量显著高于公鸡(P<0.05);母鸡腿肌的肉豆蔻酸、α-亚麻酸、亚油酸、γ-亚麻酸显著高于公鸡(P<0.05);公鸡腿肌的硬脂酸、顺-二十二碳六烯酸(DHA)、花生四烯酸、饱和脂肪酸显著高于母鸡(P<0.05);洪江雪峰乌骨鸡腿肌肌苷酸(IMP)含量无性别差异(P>0.05)。结果表明:性别对180日龄洪江雪峰乌骨鸡腿肌肉品质具有影响,公鸡腿肌富含铁、锌、DHA、花生四烯酸,且肉色更佳;母鸡腿肌肉质细嫩,风味更佳,而且硒含量丰富。 To study the effect of gender on the meat quality of leg muscle in Hongjiang Xuefeng black-bone chicken, 24 healthy 180-day-old Hongjiang Xuefeng black-bone chickens with the similar body weight were randomly selected for slaughtering, and the drip loss, shear force, rate of water loss, meat color, pH, crude protein, crude fat, moisture, crude ash, inosinic acid,amino acid, fatty acid, iron, copper, zinc and selenium of leg muscle were determined. The results showed that the shearing force of Hongjiang Xuefeng black-bone chickens in male was significantly higher than that in female, and the lightness and pH values in female were significantly higher than those in male. The water content of the leg muscle in male was significantly higher than that in female(P<0.05). The crude fat content of the leg muscle of females was significantly higher than that of males(P<0.05).The contents of iron and zinc in leg muscle of males were significantly higher than those of females(P<0.05). The selenium content of females was significantly higher than that of males(P<0.05), and the cysteine content of the leg muscle of females was significantly higher than that of males(P<0.05). Myristic acid, α-linolenic acid, linoleic acid and γ-linolenic acid in the leg muscle of females were significantly higher than those in males. Stearic acid, cis-22 carbon hexaenoic acid, arachidonic acid and saturated fatty acids in leg muscle of males were significantly higher than those in females. The results indicated that the leg muscle quality of Hongjiang Xuefeng black-bone chicken between genders had its own advantages at the 180 days of age. Leg muscle of males was rich in iron, zinc, DHA and arachidonic acid, and the meat color is better, and it was delicate, and the flavor was better.Leg muscle of females was rich in selenium content.
