婴儿配方食品开罐存放期间和运输过程营养素变化的研究

摘要 研究了特殊医学用途婴儿乳蛋白部分水解配方食品在开启包装后室温储存稳定性试验和运输试验过程中营养素的变化情况。结果表明:开罐存放期间产品营养成分叶黄素和维生素D的稳定性会遭到破坏,产生不同程度的衰减,其中叶黄素衰减程度最高,但所有营养素在样品开封使用一个月的过程中均符合标准要求;运输过程营养素均一性良好,产品品质稳定。研究结果为特殊医学用途婴儿配方食品的研发及应用提供一定的参考。 To study the changes of nutrients of infant milk protein partially hydrolyzed formula for special medical purposes in the process of storage stability test after opening the packet and transportation test. The results showed that the stability of lutein and vitamin D in the product would be destroyed and attenuated to varying degrees, among which lutein had the highest attenuation. However, all nutrients met the standard requirements when the samples were opened and used for one month;During transportation process, the nutrient uniformity was good and the product quality was stable. The present results provided a certain reference for the R&D and application of infant formula for special medical purposes.
