青稞酒糟中蛋白质的提取工艺 被引量:2

摘要 采用醇碱溶、酸沉析的方法对青稞酒糟蛋白质进行提取。在单因素试验的基础上,选取浸提液醇碱比、固液比、浸提时间和浸提温度为影响因子,采用4因素3水平的正交试验,以蛋白质提取率作为指标,确定最佳提取工艺条件为浸提液醇碱比1∶3,固液比1∶45,浸提温度30℃,浸提时间90 min,各因素对蛋白质提取率的影响强弱顺序为固液比>醇碱比>浸提温度>浸提时间。 The protein of highland barley distiller’s grains was extracted by alcohol-alkali dissolution and acid precipitation.Based on the single factor experiment,the alcohol-alkali ratio,solid-liquid ratio,extraction time and extraction temperature were selected as the influencing factors.Using the orthogonal experiment of four factors and three levels,and taking the protein extraction rate as the in⁃dex,the optimal extraction process condition was alcohol-alkali ratio of 1∶3,solid-liquid ratio of 1∶45,extraction temperature of 30℃,and extraction time of 90 min.The order of the influence of the various factors on the protein extraction rate was solid-liquid ra⁃tio>alcohol-alkali ratio>extraction temperature>extraction time.
