摘要 牛初乳是指从健康母牛分娩后72h内挤出的乳汁,其含有丰富的营养物质及乳铁蛋白、免疫球蛋白、生长因子等活性成分,具有众多的营养保健功能。本文综述了牛初乳的功效成分及安全性,总结了牛初乳对上呼吸道感染的改善作用、运动人群支持功能、改善胃肠道功能等生理功能,针对牛初乳在各类食品中的开发应用情况进行分析,以期为后续牛初乳产品的深入研究及精深加工提供理论参考。 Bovine colostrum is the milk squeezed from a healthy cow within 72 hours after birth. It is rich in nutrients and contains active ingredients such as lactoferrin, immunoglobulin and growth factor, has the multitudinous nutrition health care function. In this paper, the functional components and safety of bovine colostrum were reviewed, and the physiological functions of bovine colostrum such as improving upper respiratory tract infection, supporting function of sports crowd and improving gastrointestinal tract function were summarized, the development and application of bovine colostrum in various foods were analyzed in order to provide theoretical reference for further study and intensive processing of bovine colostrum products.
