适宜制备浓香型大曲的植被生态评价研究

摘要 采用高通量测序、理化检测等对制曲植被环境、制曲相关微生物进行检测,运用相关性分析、主成分分析、聚类分析探究浓香大曲相关微生物、土壤、植被组成之间的关联,建立适宜浓香制曲的植被生态评价,为生态酿酒提供科学的指导。研究结果表明,不同植被组成下其土壤环境指标pH值、水分、有机碳、有机质等与浓香大曲真菌和细菌丰度存在一定的相关性。综合不同植被组成环境下制曲相关微生物出现频数和丰度等,通过主成分析与聚类分析得出适宜浓香制曲微生态的植被生态:紫薇,女贞,桉树,南天竹;珊瑚树,秤星树;黄桷树,竹林。 High-throughput sequencing and physicochemical testing were used to detect the Daqu-making related microorganisms in the environment,and then correlation analysis,principal component analysis and cluster analysis were used to explore the relationship between Daqu-making related microorganisms,soil,and vegetation composition, so as to establish an ecological evaluation system for the vegetation suitable for the production of Nongxiang Daqu.The results showed that there was a certain correlation between soil environment indicators(pH value,water,organic carbon and organic matter) and the abundance of fungi and bacteria in Nongxiang Daqu under different vegetation composition.Based on the occurrence frequency and abundance of Daqu-making related microorganisms in environments with different vegetation composition,through principal component analysis and cluster analysis, the vegetation composition suitable for the production of Nongxiang Daqu were obtained as follows: Lagerstroemia indica L.,Ligustrum lucidum Ait.,Eucalyptus robusta Smith, and Nandina domestica Thunb.;Viburnum odoratissimum Ker.-Gawl., and Ilex asprella(Hook.et Arn.)Champ.ex Benth.;Ficus virens and bamboo.
