食品添加剂在饮料中的应用与检测方法探析 被引量:7

摘要 饮料不仅可以解渴,还能为机体补充多种营养元素,满足不同人群的需要,在食品工业中占有重要地位。食品添加剂是食品加工业的灵魂,助推了食品行业的快速发展。饮料中的食品添加剂不但能满足加工工艺要求,而且可以改善饮料的质地和口感,增加饮料的色泽和芳香,延长货架期。对饮料中常见食品添加剂的种类、作用及其在碳酸饮料、果蔬汁饮料、茶饮料、蛋白饮料中的应用进行总结,分析实验室常用检测方法,旨在为食品添加剂的合理使用、规范检测提供参考和依据。 Beverages not only quench thirst, but also supple the body with a variety of nutritional elements, to meet the needs of different people and occupying an important position in the food industry. Food additives are the soul of the food processing industry, which boosts the rapid development of the food industry. Food additives in beverages not only meet the processing process requirements, but also improve the texture and taste of beverages, increase the color and aroma of beverages, and extend the shelf life. The types and roles of common food additives in beverages and some of their applications in carbonated beverages, fruit and vegetable juice beverages, tea beverages and protein beverages are summarized, and the common laboratory testing methods are analyzed, aiming to provide reference and basis for the rational use and standardized testing of food additives.
