中链甘油三酯的制备、分析及应用研究进展 被引量:6

摘要 中链甘油三酯是指含有长度为C 8~C 12的脂肪酸的甘油三酯,同普通的植物油脂相比,其具有黏度小、表面张力小、氧化稳定性好等独特的理化性质和在人体中代谢速度快等特性。它既可作为治疗脂肪吸收不良、高血脂、肥胖等疾病的功能食品,又可作为食品添加剂和化妆品辅料,在食品工业、医药品及日用化工等领域具有广阔的应用前景。该文简述了中链甘油三酯的合成制备途径、分析检测技术以及其在食品、医药、化妆品领域的应用,以期为中链甘油三酯的开发与应用提供进一步研究参考。 Medium chain triglyceride(MCT)refers to triglycerides containing C 8 to C 12 fatty acids.Compared with common vegetable oils,MCT has unique physical and chemical properties such as low viscosity,low surface tension,good oxidation stability,and fast metabolism in the human body.It can not only be used as a functional food to treat fat malabsorption,hyperlipidemia,obesity,and other diseases but also as food additives and cosmetic accessories,and has broad application prospects in the food industry,medicine and daily chemical industry.This paper reviewed the synthesis and preparation methods,analysis and detection techniques of medium-chain triglyceride and its application in food,medicine and cosmetics to provide further research reference for the development and application of medium-chain triglyceride.
