摘要
本研究论述了鲜活淡水鱼的生产加工和运输的发展现状,主要分析了在运输经营环节中潜在的质量安全风险和成因。为切实保障并提升鲜活淡水鱼质量安全水平,在技术支撑、组织保障和制度管理层面提出了建立淡水鱼运输过程的应激控制技术;建立以企业为核心的质量安全监管体系;建立水产品质量安全全程可追溯制度等3个防范措施。
This paper discussed the development status of the production,processing and transportation of the freshwater fish,and mainly analyzed the potential quality and safety risks and their causes in the transportation and operation link.To effectively guarantee and improve the quality and safety level of the freshwater fish,three preventive measures were established from technical support,organizational guarantee,and system management,including the stress control technology in transportation process of the freshwater fish,the quality and safety supervision system based on enterprises as core,and the whole-process traceability system of aquatic product quality and safety.[Chinese Fishery Quality and Standards,2022,12(5):51-57]
