鲜菌草工厂化周年瓶栽银耳质量和安全性评价 被引量:4

Quality and safety evaluation of Tremella fuciformis by industrial annual cultivation with fresh JUNCAO in bottle

摘要 为评价鲜菌草工厂化周年瓶栽银耳的质量和安全性,以木屑、棉籽壳原料为对照,利用‘绿洲1号’鲜菌草为主要原料工厂化周年瓶栽银耳,测定不同配方栽培组银耳子实体蛋白质、氨基酸、总糖、粗多糖、多糖肽等营养成分的含量及重金属含量、农药残留、棉酚含量,分析其质量和安全性.结果显示:‘绿洲1号’鲜菌草配方栽培组(F1)工厂化栽培的银耳,其蛋白质含量分别比木屑配方栽培组(CK1)、棉籽壳配方栽培组(CK2)高8.7%、53.2%,且差异显著;F1的总糖含量与CK1相同;F1的氨基酸总量分别比CK1、CK2高6.7%、46.1%,且差异显著;在棉籽壳栽培料中加入鲜菌草可提高银耳子实体蛋白质和氨基酸的含量;F1的粗多糖含量分别比CK1、CK2高5.0%、6.8%;F1的重金属含量、农药残留符合绿色食品标准,且不含棉酚.综上,用‘绿洲1号’鲜菌草工厂化瓶栽可提高银耳的质量和安全性. In order to evaluate the quality and safety of Tremella fuciformis by industrial annual cultivation with fresh JUNCAO in bottle,fresh JUNCAO of Arundo donax cv.‘Lvzhou No.1’was used as the main material to cultivate T.fuciformis,and sawdust and cottonseed husk were used as the control.The quality and safety of cultivated T.fuciformis were evaluated for the contents of protein,amino acid,total sugar,crude polysaccharide,polysaccharide peptide,heavy metal,pesticide residue and gossypol of fruiting body.The results showed that compared with T.fuciformis cultivated with sawdust(CK1)and cottonseed husk(CK2),the T.fuciformis cultivated with fresh JUNCAO(F1)had significantly greater protein contents,by 8.7%and 53.2%,respectively;6.7%and 46.1%higher amino acids levels,and 5.0%and 6.8%greater crude polysaccharide contents,respectively.The total sugar content of F1 was the same as that of CK1.The contents of proteins and amino acids in T.fuciformis fruiting body cultivated with cottonseed husk could be increased by adding fresh JUNCAO.F1 met the standard of Green Food in heavy metal and pesticide residue contents,and did not contain gossypol.In conclusion,industrial annual cultivation with fresh JUNCAO in bottle can improve the quality and safety of T.fuciformis.
