摘要
本试验旨在研究饲粮添加丁酸梭菌对小尾寒羊生长性能、肉品质、血清生化指标、肌肉脂肪酸组成及脂肪代谢相关基因表达的影响。选取3月龄小尾寒羊16只,平均体重(27.36±0.59) kg,随机分为2组,每组8只羊。对照组饲喂基础饲粮;丁酸梭菌组在饲粮基础中添加活菌数为5×108CFU/g的丁酸梭菌,添加量为每只羊5 g/d。预试期7 d,正试期90 d。结果表明:1)丁酸梭菌组的平均日增重显著高于对照组(P<0.05)。2)丁酸梭菌组的背最长肌pH24 h、亮度(L*)值、黄度(b*)值、蒸煮损失和剪切力均显著低于对照组(P<0.05)。3)丁酸梭菌组的血清甘油三酯(TG)、总胆固醇(TC)和低密度脂蛋白胆固醇(LDL-C)含量均显著低于对照组(P<0.05),血清高密度脂蛋白胆固醇(HDL-C)含量显著高于对照组(P<0.05)。4)丁酸梭菌组的背最长肌硬脂酸比例显著低于对照组(P<0.05),背最长肌油酸、花生四烯酸、α-亚麻酸、二十二碳六烯酸和多不饱和脂肪酸比例显著高于对照组(P<0.05)。5)丁酸梭菌组的背最长肌固醇调节元件结合蛋白-1c(SREBP-1c)和乙酰辅酶A羧化酶(ACC)的mRNA相对表达量显著高于对照组(P <0.05),背最长肌一磷酸腺苷激活蛋白激酶α2 (AMPKα2)和肉碱脂酰转移酶1-B(CPT1-B)的mRNA相对表达量显著低于对照组(P<0.05)。由此可见,饲粮添加丁酸梭菌可影响小尾寒羊生长性能、改善肉品质,并通过一磷酸腺苷激活蛋白激酶通路影响小尾寒羊脂肪酸组成及脂肪代谢相关基因的表达。
This experiment was conducted to investigate the effects of Clostridium butyricum on growth performance,meat quality,serum biochemical indexes,muscle fatty acid composition and lipid metabolism related gene expression of small-tailed Han sheep. Sixteen 3-month-old small-tailed Han sheep with the body weight of(16.52±0.30)kg were selected and randomly divided into 2 groups with 8 sheep in each group. Sheep in the control group were fed a basal diet,and others in the Clostridium butyricum group were fed the basal diet supplemented with 5 g/d Clostridium butyricum(viable count was 5×108CFU/g)per sheep. The pre-experiment lasted for 7 days,and the formal experiment lasted for 90 days. The results showed as follows:1)the average daily gain of the Clostridium butyricum group was significantly higher than that of the control group(P<0.05). 2)The pH24 h,brightness(L*)value,yellow(b*)value,cooking loss and shear force in Longissimus dorsi of the Clostridium butyricum group were significantly lower than those of the control group(P<0.05). 3)The contents of triglyceride(TG),total cholesterol(TC)and low density lipoprotein cholesterol(LDL-C)in serum of the Clostridium butyricum group were significantly lower than those of the control group(P<0.05),and the serum high density lipoprotein cholesterol(HDL-C)content was significantly higher than that of the control group(P<0.05). 4)The proportion of stearic acid in Longissimus dorsi of the Clostridium butyricum group was significantly lower than that of the control group(P<0.05),and the proportions of oleic acid,arachidonic acid, α-linolenic acid,docosahexaenoic acid and polyunsaturated fatty acid in Longissimus dorsi were significantly higher than those of the control group(P<0.05). 5)The mRNA expression levels of sterol regulatory element binding protein-1c(SREBP-1c)and acetyl-CoA carboxylase(ACC)in Longissimus dorsi of the Clostridium butyricum group were significantly higher than those of the control group(P<0.05),and the mRNA expression levels of adenosine monophosphate-activated protein kinaseα2(AMPKα2)and carnitine lipoyltransferase1-B(CPT1-B)were significantly lower than those of the control group(P<0.05). In conclusion,dietary supplementation of Clostridium butyricum can affect the growth performance and improve the meat quality,and affect the fatty acid composition and lipid metabolism related gene expression of smalltailed Han sheep through adenosine monophosphate-activated protein kinase signaling pathways.[Chinese Journal of Animal Nutrition,2023,35(1):391-402]
