摘要
可食淀粉膜可以同内包装物一起食用,既安全卫生,又能有效解决塑料薄膜包装所产生的污染问题,开发具有良好包装性能的可食淀粉膜成为近期研究热点。在前期研究制备的酸解酯化复合变性淀粉的基础上,重点考察了酸解酯化复合变性淀粉、海藻酸钠、明胶、甘油质量分数对可食淀粉膜包装特性的影响,并对其工艺条件进行优化。研究结果表明,可食淀粉膜优化工艺条件为:酸解酯化复合变性淀粉质量分数10%,甘油质量分数1.0%,海藻酸钠质量分数0.5%,明胶质量分数0.7%,干燥温度38℃。此条件下可食淀粉膜性能优良。
The edible starch film can be eaten together with the inner packaging, which is not only safe and hygienic,but also can effectively solve the pollution problem of waste generated by the original plastic film packaging. The development of edible starch film with good packaging performance has become a recent research focus.In this paper,on the basis of the acid-hydrolyzed and esterified compound modified starch prepared in the previous research,the effects of acid-hydrolyzed and esterified compound modified starch, sodium alginate,gelatin,glycerin and other raw and auxiliary materials on the packaging properties of edible starch film were studied, and the packaging characteristics of the edible starch film were studied. The process conditions were optimized. The research results showed that the optimized process conditions for preparing acid-hydrolyzed and esterified compound modified starch edible starch film are as follows:The optimized formula(using water as the medium, mass fraction) was 10% of acid hydrolyzed esterified compound modified starch, 1.0% of glycerol, 0.5% of sodium alginate, 0.7% of gelatin, and the drying temperature was 38℃. The edible starch film produced under the above optimized process conditions has excellent performance.
