摘要
本文针对食品中氯霉素的检测方法进行探究,从食品中氯霉素的来源和危害入手,介绍了酶联免疫吸附(Enzyme Linked Immunosorbent Assay,ELISA)法在食品氯霉素检测中的应用,详细分析了氯霉素检测结果的影响因素及应对措施。结果显示,ELISA法检测食品中的氯霉素具有诸多优势,影响检测结果的因素也较多。必须从采样保存、试剂选用、加样、温育、洗涤、显色、比色及结果计算各个环节入手加强控制,才能保证检测结果的准确性。
The article probes into the detection method of chloramphenicol in food, starting with the source and harm of chloramphenicol in food, introduces the application of enzyme linked immunosorbent assay(ELISA)in the detection of chloramphenicol in food, and expounds the influencing factors of the detection results of chloramphenicol and the countermeasures. The results showed that the ELISA method had many advantages in detecting chloramphenicol in food, and there were also many factors affecting the detection results. In order to ensure the accuracy of the test results, we must strengthen the control from the aspects of sampling and preservation, reagent selection, sample addition, incubation, washing, color development, colorimetry and result calculation.
