摘要 “食用香料化学”是香料香精技术与工程专业的必修课。与传统的食用香料化学课程教学仅依赖于教师的课堂讲授相比,当下移动互联网大规模普及,连同多媒体技术快速发展,使线上教学逐步成为传统教学的重要补充形式。运用网络多媒体教学手段,促进学生理解课程知识、掌握行业发展动态,是新形势下教学研究的重要方向。基于此,本文探讨了网络多媒体技术在“食用香料化学”课程教学中的应用,以期为香料香精专业人才的培养提供参考。 Flavor Compound Chemistry is a compulsory course open to students majoring in perfume and aroma technology and engineering. Compared with the traditional courses that rely on teachers’ classroom teaching, online teaching has now become a supplementary mean of traditional teaching, due to the popularization of internet and the development of multimedia. Therefore, the use of network multimedia teaching tools to promote students’ understanding of course knowledge and industry developments is an important direction for teaching research in the new situation. In this study, the application of network multimedia in flavor compound chemistry course was discussed, which may provide a reference for the training of professionals in flavour and fragrance.
