纹党参原料部位对八宝茶品质的影响 被引量:1

摘要 研究纹党参原料部位对八宝茶品质特征的影响。以八宝茶为CK组,在八宝茶中添加纹党参不同部位(纹党参片和纹党参段),评价冲泡第2次得到样品的颜色、风味和口味等品质特征。结果表明,纹党参提高了八宝茶的鲜味和口味丰富性,降低产品苦味强度18.21%~23.32%,整体口感更佳。其中,纹党参片茶的颜色澄清透明,为浅红色,而纹党参段茶颜色略浑浊。感官评价结果表明,党参片茶将茶叶与纹党参涩味完美融合,口感醇和浓厚,带有回甘和纹党参的原有的特征风味,感官得分最高,比CK组提高了21.67%。并且纹党参片的加入对八宝茶的组分溶出具有增效作用,使得纹党参片茶的可溶性固形物含量最高,比CK组提高12.13%。因此,纹党参片更加适宜作为八宝茶的配料。 Effect of raw material parts of Codonopsis lanceolata on qualities of Babao tea was evaluated. The Codonopsis lanceolata slice and segment was added to Babao tea. The color,flavor and taste of the teas was evaluated with the Babao tea as the CK. The results showed that both the slice and segment of Codonopsis pilosula improved the freshness and taste richness of Babao tea,reduced the bitterness by 18.21%~23.32%,and raised the overall taste. The color of slice tea was clear and transparent,which was light red,while the color of segment tea was slightly turbid. The slice tea perfectly integrated the astringency of tea and Codonopsis pilosula with its original flavor. The sensory score of the slice tea was the highest,that was 21.67% higher than that of CK. Moreover,the addition of Codonopsis pilosula slice showed a synergistic effect on the dissolution of components of Babao tea. The soluble solid content of slice tea was the highest,that was 12.13% higher than that of the CK.Therefore,the slice of Codonopsis pilosula was more suitable as an ingredient of Babao tea.
