摘要
以玉米胚芽为原料,采用水酶法从玉米胚芽中提取玉米胚芽蛋白基料。通过试验得出,碱性蛋白酶水解玉米胚芽的最佳酶解条件为:酶解温度55℃,pH值9.5,加酶量0.20%,酶解时间4.5 h。此工艺条件下,酶解后水解度达到49.61%。
The maize germ protein base was extracted from maize germ by water enzyme method.The optimum conditions for the hydrolysis of corn germ by alkaline protease were as follows:temperature 55℃,pH 9.5,enzyme dosage 0.20%and hydrolysis time 4.5 h.
