6种市售露酒中挥发性化合物的测定与分析 被引量:2

摘要 为比较分析市售露酒的挥发性化合物,采用顶空固相微萃取-气相色谱质谱联用(Head Space-Solid Phase Microextraction-Gas Chromatography-Mass Spectrometry,HS-SPME-GC-MS)法测定了6种露酒产品,结合挥发性成分含量、类别和主成分分析(Principal Component Analysis,PCA)讨论了异同。共鉴定出113种化合物,主要包括酯类、烯烃类、醇类、醛类等物质,其中5个化合物为6种产品共有,分别是乙醇、D-柠檬烯、己酸乙酯、棕榈酸乙酯和苯乙烯。各产品的挥发性成分含量及数量相差较大,浸提类露酒中未发现酮类物质。主成分分析提取了4个主成分,累计贡献率达88.63%,4个主成分主要包含酯类、醇类和烯烃类物质,说明这些物质可以作为衡量露酒品质的重要指标。样品的主成分分析发现,复蒸馏和浸提工艺的差异对露酒挥发性成分影响明显。本研究为露酒的开发及品质评价提供相关理论依据。 To compare and analyze the volatile compounds in the commercial Lujiu,six products were determined by head space-solid phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS).The similarities and differences of these products were discussed by principal component analysis(PCA),based on the content and type of volatile compounds.A total of 113 compounds,including esters,olefins,alcohols,aldehydes etc.,were identified.Among them,ethanol,D-limonene,ethyl hexanoate,ethyl palmitate and styrene,were identified in all the six products.The content and type of volatile compounds in the six products varied greatly.No ketones were found in immersed Lujiu.According to PCA results,the cumulative contribution rate of four principal components was 88.63%.The four principal components mainly integrated esters,alcohols and olefins,which indicated they could serve as important indicators to illustrate the quality of Lujiu.The PCA scores of different samples showed that the different between redistillation and immersion had obvious effects on the volatile compounds of Lujiu.This study provided a theoretical basis for product development and quality evaluation of Lujiu.
