摘要
5-羟甲基糠醛(5-hydroxymethylfurfural,5-HMF)是一种杂环化合物,广泛存在于富含糖类和蛋白质的中药中,其含量随着中药的炮制、贮藏及配伍等加工过程发生改变,也因其具有保护肝脏、抗肿瘤、抗心肌缺血、抗氧化、改善血液流变学等生物活性被认为是有益的成分,被医学界所重视。但含量越高,其对人体的益处未必越好,也有研究表明高剂量的5-HMF具有肝脏毒性、致癌、致基因突变及细胞毒性等毒副作用。结合国内外有关文献,本文通过对5-HMF的产生和分解机理、影响因素、代谢途径、药理毒理作用等生物活性方面进行全面的概述,同时,总结归纳了5-HMF在中药炮制、贮藏、配伍等过程的变化,以期为在中药的加工过程中合理地控制5-HMF的质量,正确地评估其对人体的健康风险提供理论依据。
5-hydroxymethylfurfural(5-HMF)is a kind of heterocyclic compound,that widely exists in traditional Chinese medicines rich in sugar and protein.Its content will change inthe herb processing,storage,and compatibility.It is also considered a beneficial component because of its biological activities of protecting the liver,resisting tumors,resisting myocardial ischemia,resisting oxidation,improving hemorheology,and being valued by the medical community.However,the higher the content,the better its benefits to the human body may not be.Studies show that a high dose of 5-HMF has hepatotoxicity,as well as carcinogenic,gene mutation,cytotoxicity,and other toxic side effects.Combined with the relevant literature,this paper gives a comprehensive overview of the production,decomposition mechanism,influencing factors,metabolic pathways,pharmacological,toxicological effectsand other biological activities of 5-HMF.At the same time,it summarizes the changes of 5-HMF in the herb processing,storage and compatibility.This paper provides a theoretical basis for reasonably controlling the quality of 5-HMF and correctly evaluating its health risks to the human body in the processing processof traditional Chinese herbs.
