摘要
余甘子是热带和亚热带地区常见的一种药用植物,具有多种生物活性。为拓宽余甘子的应用范围,试验以余甘子、金银花为主要原料研制一款复合饮料。采用单因素试验和正交试验对余甘子金银花饮料进行复配。结果表明,余甘子金银花复合饮料的最佳配方为余甘子果汁40%、金银花浸提液25%、果葡糖浆5%、柠檬酸0.08%、稳定剂羧甲基纤维素钠量0.15%。在此配方条件下余甘子金银花饮料评分最高,稳定性较好。此外,加入0.15%橄榄鲜榨汁和0.3%食用盐能进一步提升该饮料的品质,使复合饮料更具风味。试验结果为余甘子新资源食品开发利用奠定基础,具有极大的市场潜力。
Phyllanthus emblica is a common medicinal plant in tropical and subtropical areas,which has many bioactivities.In order to broaden the application of Phyllanthus emblica,a beverage enriched with Phyllanthus emblica and honeysuckle was prepared.The formula of Phyllanthus emblica and honeysuckle beverage was optimized by single factor experiment and orthogonal experiment.The results showed that the optimized formula of the beverage was Phyllanthus emblica juice 40%,honeysuckle extract 25%,fructose syrup 5%,citric acid 0.08%,and stabilizer sodium carboxymethyl cellulose 0.15%.Phyllanthus emblica and honeysuckle beverage made according the optimized formula had the highest sensory score and good stability.Besides,the addition of 0.15%fresh olive juice and 0.3%salt could improve the quality of this beverage and make it more flavorful.The results lay a theoretical foundation for the development and utilization of Phyllanthus emblica as the new resource food.The Phyllanthus emblica beverage also has great market potential.
