摘要
随着白酒质量要求不断提高,“酿酒专用粮”备受关注。专用高粱作为“酿酒专用粮”最重要的原料之一,其种类、成分等与白酒品质关系的明晰重要而迫切。为进一步利于酿酒专用高粱的深入研究,对酿酒专用高粱的研究现状进行评述,为后续研究发展提供理论支撑依据,并对其未来的发展进行展望。
With the continuous improvement of liquor quality requirements,"special grain for liquor making"has attracted much attention.Special sorghum is one of the most important raw materials ofspecial grain for brewing",and it is important and urgent to clarify the relationship between its kind and composition and liquor quality.In order to further facilitate the in-depth research of special sorghum for brewing,review the research status of special sorghum for brewing to provide theoretical support for the follow-up research and development,and look forward to its future development.
