摘要
为鉴选优质山药地方品种资源,以6个安顺山药地方品种为材料,对其主要营养成分、16种氨基酸和5种矿物营养成分含量进行测定及相关性分析。结果表明,6个安顺地方山药品种的营养成分变异系数均超过20.00%,必需氨基酸含量占比均值达到31.97%;相关性分析表明,有7个必需氨基酸和4个非必需氨基酸与总氨基酸含量之间呈极显著正相关;11个主要营养成分含量中,除了钙和铁元素含量外,其余9个品质营养成分含量均互为正相关。综合来看,安顺市西秀区蔡官山药(LC)氨基酸总量、蛋白质、干物质、维生素C含量分别为1.84%、2.38%、28.00%和0.37 mg/kg,钾和镁元素含量分别为4710.00 mg/kg和192.00 mg/kg,综合营养品质较好,适合作为优异品种进行综合开发利用。
In order to identify and select local variety resources of high-quality Chinese yam,the contents of main nutrients,16 amino acids and 5 mineral nutrients and their correlation analysis were determined and analyzed by using local varieties of Anshun yam as materials.The results showed that the coefficient of variation of nutritional components of 6 Anshun local yam varieties exceeded 20.00%,and the average content of essential amino acids reached 31.97%.The correlation analysis showed that the content of 7 essential amino acids and 4 non-essential amino acids were significantly positively correlated with the total amino acid content.Among the 11 main nutrient components,except for calcium and iron,the contents of the other 9 quality nutrient components were positively correlated with each other.In words,the content of the total amino acid,protein,dry matter and vitamin C of Caiguan yam(LC)in Xixiu District,Anshun City were 1.84%,2.38%,28.00%and 0.37mg/kg respectively,with the contents of potassium of 4710.00 mg/kg and magnesium of 192.00mg/kg,respectively.Its comprehensive nutritional quality is well,and which is suitable for comprehensive development and utilization as an excellent variety.
