油菜苔和常见蔬菜ICP-MS离子组分分析与评价

摘要 [目的]本文旨在研究油菜苔(2个品种)与15种常见蔬菜16种离子组分含量与综合评价,为油菜苔推广提供参考。[方法]利用电感耦合等离子体质谱法(ICP-MS)测定油菜苔和常见蔬菜中16种矿质元素含量,并利用相关分析、聚类分析、离子图谱和对数主成分分析综合评价油菜苔与15种蔬菜的矿质营养品质。[结果]16种矿质元素含量变异大,变异系数由大到小依次为Mo、As、Fe、Pb、Na、Mn、Se、Cd、Ba、Cu、Ca、Mg、K、B、Zn、P;Cu、Fe、Zn之间,有害元素(As、Cd、Pb)及其与Mg、K、Ca、Fe间均达到显著正相关。基于离子组分含量将17种蔬菜划分为5组,组Ⅰ和Ⅱ具有离子协同积累特征,组Ⅲ具有低Na特征,组Ⅳ具有富Se特征,组Ⅴ具有均衡有益元素、低有害元素的特征。依据对数主成分分析将16种元素转化为4个主成分综合指标,累计贡献率达82.035%。矿质营养综合评价值S f排名前三的蔬菜为菠菜、广东菜心和西芹。四季豆、黄瓜、西兰花以及‘狮山2017’、白菜苔、‘狮山菜苔’中矿质元素含量均衡,胡萝卜和高丽菜中Se含量较高。[结论]油菜苔离子组分含量较均衡,利用对数主成分分析结合相关分析和聚类分析实现了蔬菜品种矿质营养的综合评价。 [Objectives]The paper aimed to study the ionic components contents and their evaluation of 2 rapeseed bolting varieties and 15 common vegetables in order to accelerate the extension of rapeseed bolting.[Methods]The contents of 16 ionic contents were measured by inductively coupled plasma mass spectrometry(ICP-MS).The correlation analysis,cluster analysis,ion spectrum and logarithmic principal component analysis were used to evaluate comprehensively the ionic contents in 17 vegetables.[Results]Each of the 16 ionic components in 17 vegetables had large variation,and the order of variation coefficient was Mo,As,Fe,Pb,Na,Mn,Se,Cd,Ba,Cu,Ca,Mg,K,B,Zn,P.Significantly positive correlations were observed among Cu,Fe,Zn,and among harmful elements(As,Cd,Pb),and between each of harmful elements and Mg,K,Ca,Fe,showing the strong synergistic enrichment phenomenon.17 vegetables were divided into five categories based on the contents of ionome.CategoryⅠand CategoryⅡhad ion synergistic accumulation,CategoryⅢhad low sodium,CategoryⅣhad selenium enrichment,and CategoryⅤshowed a balanced content of beneficial elements and significantly lower characteristics of harmful elements.According to the logarithmic principal component analysis,16 elements were transformed into four principal component comprehensive indexes,and their cumulative contribution rate reached 82.035%.The top three vegetables in the comprehensive evaluation value of mineral nutrition S f were spinach,cantonese cabbage and celery.Green bean,cucumber,broccoli,and‘Shishan 2017’,Chinese cabbage bolting and‘Shishan bolting’had balanced mineral nutritional values.Se content was higher in carrot and cabbage.[Conclusions]The content of ionic contents in rapeseed bolting was relatively balanced.The comprehensive evaluation of mineral nutrition of different types of vegetables was realized by logarithmic principal component analysis combined with correlation analysis and cluster analysis.
