摘要
新鲜水产品在运输和加工过程中,因受到环境因素的影响,导致发病率和死亡率增加。麻醉药物可以抑制动物的中枢神经系统功能,使鱼类镇静,降低水产品对环境的敏感性,提高其存活率。目前,丁香酚类化合物在水产品的运输过程中被广泛作为麻醉剂使用。2017年,世界卫生组织国际癌症研究机构公布的致癌物清单中,丁香酚被归类为3类致癌物。2019年,我国市场监管总局发布了《水产品及水中丁香酚类化合物的测定》(BJS 201908)公告。然而,目前我国对丁香酚类化合物的检测方法仍未达到国标水平,不同学者所用方法仍存在一定差异,本文将对目前几种研究较多的水产品中丁香酚类化合物检测方法进行综合整理阐述,以期为丁香酚类化合物的检测及风险评估提供参考。
During the transportation and processing of fresh aquatic products,due to the impact of environmental factors,incidence rate and mortality increased.Anesthetic drugs can inhibit the central nervous system function of animals,calm fish,reduce the sensitivity of aquatic products to the environment,and improve their survival rate.At present,eugenol compounds are widely used as anesthetics in the transportation of aquatic products.In 2017,eugenol was classified as Class 3 carcinogen in the list of carcinogen published by the International Agency for Research on Cancer of the World Health Organization.In 2019,the State Administration for Market Regulation of China issued a notice titled"Determination of Eugenol Compounds in Aquatic Products and Water"(BJS 201908).However,currently,the detection methods for eugenol compounds in China have not yet reached the national standard level,and there are still some differences in the methods used by different scholars.This article will comprehensively organize and elaborate on the detection methods for eugenol compounds in several currently researched aquatic products,to provide reference for the detection and risk assessment of eugenol compounds.
