摘要
白酒在中国传统文化中占据重要地位。大曲不仅作为白酒酿造的发酵剂,还作为白酒发酵的原料物质之一以提供丰富的风味物质。传统制曲工艺存在着劳动效率低、批次间质量差异大、经济效益低等缺点,为进一步实现白酒行业的智能化、标准化,制曲工艺自动化势在必行。现阶段各个工序单元基本能够实现机械化、自动化,但如何实现整个制曲工艺流程自动化、智能化协调运转仍然需要投入更多研究。
Baijiu occupies an important position in traditional Chinese culture.Daqu is not only used as a starter for liquor brewing,but also used as one of the raw materials for liquor fermentation to provide flavor substances.The traditional Daqu-making process has shortcomings such as low labor efficiency,large quality difference between batches,and low economic benefits.It is urgent to realize the intelligent,standardized and automatic production of Daqu.At present,each process link of Daqu making can basically achieve mechanization and automation,but the automation and intelligent coordination of the entire Daqu-making process needs further exploration.
