Monitoring and analysis of Listeria monocytogenes contamination in the main consumer food in Yuzhou city of Henan from 2016 to 2021

摘要 目的了解禹州市主要消费食品中单核细胞增生李斯特氏菌的污染状况,为加强食品卫生监督,政府制定食品卫生政策提供参考。方法依据GB 4789.30-2016《食品安全国家标准食品微生物学检验单核细胞增生李斯特氏菌检验》对采集的961份食品样品进行单核细胞增生李斯特氏菌检测。结果共检出35份阳性样品,总检出率为3.64%。冷藏熟肉制品、冷鲜禽肉以及冷冻水产品及其制品中单核细胞增生李斯特氏菌检出率依次为9.26%、17.65%、8.93%,其他类食品未检出。不同包装类型食品中散装食品检出率(5.23%)明显高于预包装食品(1.64%),检出率差异有统计学意义(χ^(2)=8.712,P=0.003);不同年度、不同季度、不同场所的检出率差异均无统计学意义(P>0.05)。结论禹州市居民主要消费食品中存在污染,其中冷藏熟肉制品、冷鲜禽肉、冷冻水产品及其制品污染风险较大,建议食品卫生监管部门加强对此类食品的监督和管理,预防单核细胞增生李斯特氏菌食源性疾病的发生。 Objective To understand the contamination status of Listeria monocytogenes in the main consumer food in Yuzhou,and provide reference for strengthening food hygiene supervision and formulating the related policy of food hygiene.Methods According to the National Food Safety Standards for Food Microbiology Test:Listeria Monocytogenes Test(GB 4789.30-2016),961 food samples were tested for Listeria monocytogenes.Results A total of 35 positive samples were detected,and the overall positive detection rate was 3.64%.The positive detection rates of Listeria monocytogenes in cooked meat products,cold fresh poultry meat,and frozen aquatic products and their products were 9.26%,17.65%,8.93%.The positive detection rate in bulk food(5.23%)was significantly higher than that in prepackaged food(1.64%)in different kinds of packaged food,and the difference in detection rate was statistically significant(χ^(2)=8.712,P=0.003).There was no significant difference in the detection rate in different years,quarters and places(P>0.05).Conclusions There is a risk of contamination in the food mainly consumed by the residents of Yuzhou city.Among them,cooked meat products,cold fresh poultry meat,frozen aquatic products and their products are at greater risk of contamination.It is recommended that the relevant food hygiene supervision departments strengthen supervision and management for the foods of these kinds to prevent the food-borne diseases caused by Listeria monocytogenes.
