摘要
利用指示剂滴定法定量准确测定各种不同类型天佑德青稞酒中酸酯总量的含量。实验中首先以碱中和试样中的游离酸,再准确加入一定量的碱,加热回流使酯类完全皂化,最后以酸中和剩余的碱,通过计算碱的总消耗量计算出酸酯总量。实验中的老酒是指存放时间在五年以上的酒,新酒就是刚蒸馏出的酒。通过对天佑德老酒与现生产新酒以及对同一品种系列不同档次的天佑德成品酒中酸酯总量的含量进行综合分析发现,老酒的酸酯总量普遍高于刚生产新酒的酸酯总量,高出37.8%左右;对于成品酒中的酸酯总量来看,发现同一档次的天佑德成品酒酸酯总量基本趋于稳定,处于同一水平区间;不同档次的天佑德成品酒中酸酯总量是高端产品的酸酯总量最高,其含量在35.53~49.76 mmoL/L之间,其次是中高端产品,其含量在24.28~34.31 mmoL/L之间,中低端产品的酸酯总量最低,其含量在20.41~22.88 mmoL/L之间。
The total amount of esters in various types of barley wine was accurately determined by indicator titration.In the experiment,the base first neutralized the free acid in the sample,and then a certain amount of base was added accurately,heating and reflux to make the ester completely saponified,and finally the acid neutralized the remaining base,and the total amount of acid esters was calculated by calculating the total consumption of the base.The old wine in this article refers to the wine stored for more than five years,and the new wine is just distilled wine.Through a comprehensive analysis of the total content of acid esters in the old wine and the now produced new wine of the same variety and series,it is found that,The total amount of acid esters of old wine is generally higher than the total amount of acid esters of new wine,About 37.8%higher;For the total amount of esters in the finished wine,Found that the same grade of tianyoude finished acetate total amount is basically stable,In the same level range;The total amount of acid in different grades of finished wine is the highest amount of acid in high-end products,Its content is between 35.53~49.76mmoL/L,Second,the middle-and high-end products,Its content is between 24.28~34.31mmoL/L,The lowest total amount of low-end products of acid esters,Its content is in between the 20.41~22.88mmoL/L.
