摘要
海鸭蛋是生活在海边红树林中以鱼、虾、蟹、贝类和藻类为主要食物的鸭群所产的蛋,具有蛋黄橙红、营养成分丰富等特点。海鸭蛋蛋黄酥是以海鸭蛋为主要原料,经加工制成的特色食品。本文分析了海鸭蛋蛋黄酥生产工艺和产品的关键指标,将其生产过程标准化,形成独特指标,有利于地方特色新产品——海鸭蛋蛋黄酥的迅速推广及应用。
Sea duck eggs refer to the eggs produced by the ducks living in the coastal mangroves,which mainly eat fish,shrimp,crabs,shellfish and algae in the beach.The egg yolk is orange and red,and the nutrient content is richer than common duck eggs.Sea duck egg yolk crisp is a special food made of sea duck egg as the main raw material.This article analyzes the production process and key indicators of sea duck egg yolk crisp,standardizes its production process,forms unique indicators,and is conducive to the rapid promotion and application of a local characteristic new product-sea duck egg yolk pastry.
