摘要
目的:对比分析海南地区不同品种甜瓜的营养成分。方法:参照国家标准方法测定甜瓜的基本营养成分、有机酸、氨基酸及微量元素等成分,比较不同甜瓜之间的营养价值。结果:9个品种的甜瓜营养成分含量差异较大。8种甜瓜水分大于90%,蛋白质含量最高为0.95%,可溶性固形物含量最高为12.3%。可溶性糖主要有果糖、葡萄糖和蔗糖,未检出麦芽糖、乳糖、半乳糖和木糖。9种甜瓜都含有果糖和葡萄糖且含量都大于2 g/100 g。有机酸主要是柠檬酸,其次分别是丁二酸、乳酸和苹果酸,乙二酸和富马酸含量较少,酒石酸未检出。微量元素中钾含量最高,磷、镁、钠次之。氨基酸成分多达13种以上,其中谷氨酰胺和赖氨酸的含量较高,再次是精氨酸。结论:海南地区种植的9种甜瓜营养成分差异较大,但都含有丰富的有机酸、氨基酸、微量元素等营养成分,具有较高的营养价值。本研究可为海南甜瓜品种的筛查和种植提供一定的参考依据。
Objective To compare and analyze the nutritional components of different varieties of muskmelons in Hainan.Method According to the national standard method,the basic nutritional components,organic acids,amino acids and microelement of muskmelons were determined,and the nutritional values of different muskmelons were compared.Result The content of nutritional components of 9 kinds of muskmelons were quite different.The water content of 8 kinds of muskmelons was more than 90%,the highest protein content was 0.95%,and the highest soluble solid content was 12.3%.Soluble sugars mainly included fructose,glucose and sucrose,but maltose,lactose,galactose and xylose were not detected.Nine kinds of muskmelons contained fructose and glucose,and the content was more than 2 g/100 g.The organic acid was mainly citric acid,followed by succinic acid,lactic acid and malic acid.The content of oxalic acid and fumaric acid was less,and tartaric acid was not detected.Among the trace elements,potassium content was the highest,followed by phosphorus,magnesium and sodium.There were more than 13 kinds of amino acid components,of which glutamine and lysine were higher,and arginine was the second.Conclusion The nutritional composition of 9 kinds of muskmelons grown in Hainan varies greatly,but all are rich in organic acids,amino acids,microelements and other nutrients,and have high nutritional value.This study can provide some reference basis for the screening and planting of melon varieties in Hainan.
