药食同源植物土茯苓不同年龄品质研究

摘要 采用以粗度代替年龄的方法,比较分析了5个径级土茯苓(10~20、20~30、30~40、40~50、50~60 mm)的29种化学成分,阐明了不同年龄土茯苓化学成分的变化规律,为土茯苓资源合理利用提供科学依据。结果表明,直径20~30 mm的土茯苓块茎的直链淀粉、可溶性糖、脂肪含量最高,而40~50 mm块茎中的淀粉含量最高;10~20 mm块茎中的营养元素含量偏低;不同径级块茎中的氨基酸总量、必需氨基酸总量、半必需氨基酸总量、鲜味氨基酸总量以及非必需氨基酸总量均存在极显著差异,30~40 mm的∑DAA/∑TAA和∑EAA/∑TAA最高;落新妇苷含量随着径级的增加而呈先增加后减少的趋势,20~30 mm块茎中的落新妇苷含量最高,为0.32%;5个径级土茯苓的综合得分由高到低的顺序依次为:30~40 mm>20~30 mm>50~60 mm>10~20 mm>40~50 mm。由此可知,土茯苓块茎并非越大越好,30~40 mm的土茯苓块茎中活性成分和营养成分的含量高、品质佳,此时应及时采收。 In order to clarify the changing rules of components at different ages and provide a scientific basis for rational utilization of Smilax glabra resources,29 chemical components were determined and compared in five diameters of 10~20 mm,20~30 mm,30~40 mm,40~50 mm and 50~60 mm by using coarseness instead of age.The results showed that the content of amylose,soluble sugar and fat in 20~30 mm was the highest,while total starch was the highest in 40~50 mm.The content of nutrient elements in 10~20 mm was low.The total amount of amino acids,essential amino acids,semi-essential amino acids,savory amino acids and non-essential amino acids in different diameters were significantly different,and∑DAA/∑TAA and∑EAA/∑TAA in 30~40 mm were the highest.The content of astilbin increased first and then decreased with the increase of diameter grade,and the content of astilbin in 20~30 mm was the highest(0.32%).The order of comprehensive scores of S.glabra with five diameters was 30~40 mm>20~30 mm>50~60 mm>10~20 mm>40~50 mm.Considering comprehensively,S.glabra with 30~40 mm have high content of active ingredients and nutrients,so they should be harvested in time.
