摘要
中国蔬果产量巨大,加工后的蔬果渣营养丰富,富含粗蛋白、粗纤维、维生素、多酚、多糖、黄酮等成分,但不易保存、适口性差,不宜直接作为动物饲料。筛选优质的酵母菌种与其他益生菌复合发酵蔬果渣,可提高蔬果渣饲料的营养价值,降低饲料成本,对于果蔬加工业和畜禽养殖行业具有积极作用。文章对发酵蔬果渣的酵母菌种筛选、发酵工艺以及动物饲料方面的应用进行综述,旨在为蔬果渣发酵饲料在畜禽养殖中的研究和应用推广提供参考。
China has a huge output of vegetables and fruits,and processed vegetable and fruit residue is rich in nutrients,rich in crude protein,crude fiber,vitamins,polyphenols,polysaccharides,flavonoids and other components,but it is not easy to preserve and has poor palatability,so it can not be directly used as animal feed.Screening of high-quality yeast and other probiotics can improve the nutritional value of vegetable and fruit residue feed and reduce feed cost,which has a positive effect on fruit and vegetable processing industry and livestock and poultry breeding industry.The paper reviewed the yeast species screening,fermentation technology and application of fermented vegetable and fruit residue in animal feed,aiming to provide reference for the research and application of fermented vegetable and fruit residue in livestock and poultry breeding.
