摘要
为筛选营养价值高的肺形侧耳资源,通过必需氨基酸评分、化学评分、氨基酸比值系数、IOM模式评分、相关性分析和聚类分析等方法,开展了不同产地12个肺形侧耳的氨基酸特征和营养价值评价。结果表明:不同产地的肺形侧耳均含有丰富的营养物质和氨基酸,其中,粗多糖、粗脂肪、粗纤维、灰分、矿物质和重金属含量在不同产地肺形侧耳间差异不显著。12个样品共检测到15种氨基酸,包括除亮氨酸和异亮氨酸以外的6种必需氨基酸,其中谷氨酸含量最高。12个样品间氨基酸总量、必需氨基酸及呈味氨基酸含量均存在较大差异,氨基酸总量在16.43—39.67 mg∕g,IAA∕TAA值在16.49%—30.12%,IAA∕NIAA值在19.75%—43.11%,均低于理想蛋白质标准。甲硫氨酸+半胱氨酸是第一限制性氨基酸。通过聚类分析可将12个肺形侧耳分为4类。可根据不同产地肺形侧耳的氨基酸含量进行开发和利用,为肺形侧耳新品种的选育提供依据。
In order to screen Pleurotus geesteranus resources with high nutritional value,the amino acid characteristics and nutritional value of 12 P.geesteranus from different producing areas were evaluated by means of essential amino acid score,chemical score,amino acid ratio coefficient,IOM model score,correlation analysis and cluster analysis.The results showed that P.geesteranus from different producing areas contained rich nutrients and amino acids.Among them,there was no significant difference in the content of crude polysaccharides,crude fat,crude fiber,ash,minerals,and heavy metals among different producing areas of P.geesteranus.A total of 15 amino acids were detected in 12 samples,including 6 essential amino acids except leucine and isoleucine,of which glutamate content was the highest.The total amount of amino acids,essential amino acid and flavor amino acids among the 12 samples were significantly different.The total amount of amino acids was 16.43—39.67 mg∕g,the IAA∕TAA value was 16.49%—30.12%,and the IAA∕NIAA value was 19.75%—43.11%,which were lower than the ideal protein standard.Methionine+cysteine was the first limiting amino acid of P.geesteranus.Based on the nutritional quality of amino acids,12 P.geesteranus were divided into 4 groups by cluster analysis.It could be developed and utilized based on the amino acid content of P.geesteranus from different producing areas,providing a basis for the breeding of new varieties of P.geesteranus.
