摘要
左聚糖来源于单子叶植物和微生物,在细菌中分布最广泛。左聚糖是由β-2,6-糖苷键连接的D-果糖残基作为主链,以一些β-2,1-糖苷键连接作为支链组成的果聚糖。左聚糖降解酶分为3种类型:左聚糖酶(levanase)[EC3.2.1.65]、左聚糖生物水解酶(β-2,6-fructan 6-levanbiohydrolase,LF2ase)[EC3.2.1.64]和左聚糖果糖转移酶(levan fructotransferase,LFTase)[EC4.2.2.16]。左聚糖降解酶能将左聚糖催化生成低聚果糖、果二糖、双果糖酐IV等,是食品及医药领域的潜在资源。文章介绍了左聚糖降解酶的来源、酶学性质、结构,概述了左聚糖降解酶在食品领域的应用,对其发展趋势和研究方向进行了展望。
Levan is from monocotyledonous plants and microorganisms,and are most widely distributed in bacteria.Levan is a fructan with D-fructose residue linked byβ-2,6-glycosidic bonds as the main chain and someβ-2,1-glycosidic bonds as the branched chain.Levan-degrading enzyme is classified into three types:levanase[EC3.2.1.65],β-2,6-fructan 6-levanbiohydrolase(LF2ase)[EC3.2.1.64],and levan fructotransferase(LFTase)[EC4.2.2.16].Levan-degrading enzyme can catalyze levan to produce fructooligosaccharide,fructose disaccharide,difructose anhydride IV(DFA IV)and so on,making it a potential resource for food and medicine fields.In this paper,the sources,enzymatic properties and structure of levan-degrading enzyme are introduced,the application of levan-degrading enzyme in food field is summarized,and its development trend and research direction are prospected.
