玫瑰提取物特征香气成分分析及其在卷烟中的应用 被引量:3

摘要 对玫瑰花特征香气组分进行分析,并评价其在卷烟中的应用效果,为卷烟加香工艺提供更多的参考依据.利用95%乙醇对玫瑰花进行渗漉提取,以卷烟感官质量评价为导向,采用大孔树脂和凝胶色谱等技术制备玫瑰花特征香气组分,并应用于烟丝加香,结合气相色谱-质谱联用法(GC-MS)和相对香气活力值(ROAV)分析关键香气成分.大孔树脂30%乙醇洗脱部分具有明显的玫瑰香气特征,且能较好地改善卷烟香气、协调风格;玫瑰主要香韵组分中含有香叶基丙酮、苯乙醇、5-羟甲基糠醛等清甜香及花香特征香气成分.玫瑰辅香包括β-紫罗兰酮、棕榈酸等木香、酯香香韵特征成分.玫瑰花的特征香气是以清甜香和花香为主,同时辅以木香和酯香;玫瑰特征风味组分应用到烟丝加香中具有较好的效果,能使卷烟的抽吸口感得到明显改善,并凸显卷烟的清甜香风格特征. It is necessary to analyze the characteristic aroma components of Rosa centifolia and evaluate their application effects on cigarettes in order to provide more reference basis for the flavoring process cigarettes.Rosa centifolia was extracted by ethanol and according to a sensory-oriented method the characteristic aroma components were obtained by macroporous resin and gel chromatography,which were applied to the flavoring process of cigarettes.Among them,the key aroma components were analyzed and revealed by using gas chromatography-mass spectrometry(GC-MS)and relative aroma activity value(ROAV).The fraction eluted with 30%ethanol by macroporous resin shows a distinct aroma of Rosa centifolia and improves the flavour of cigarettes together with the coordination of aroma styles.The main fragrance components of Rosa centifolia are sweet and clear aroma characteristic ones including geranyl acetone,phenethyl alcohol,5-hydroxymethylfurfural.In addition,the auxiliary fragrance components of Rosa centifolia include woody and ester aroma ones containingβ-ionone,palmitic acid.The characteristic aroma of Rosa centifolia is mainly sweet and clear,and complemented by woody and ester styles.The distinct aroma fraction of Rosa centifolia with flavour components applied to tobacco and incense have a good effect,it can significantly improve the smoking taste of cigarettes and highlight the sweet and fragrant style characteristics of cigarettes.
