摘要
介绍高校食堂食品安全调查与检测工作的主要内容,以某地区高校食堂食品安全调查与检测工作为例,分析高校食堂食品安全调查方法,研究高校食堂食品安全检测方法,对餐具表面洁净度、成品菜的细菌总数、农药残留、兽药残留、二氧化硫残留进行检测。经过检测,高校食堂食品安全基本符合规定,部分菜品的二氧化硫残留量较高。
Introduce the main contents of the food safety investigation and detection work of college canteens.Taking the food safety investigation and detection work of college canteens in a certain region as an example,analyze the investigation methods of college canteens'food safety,study the detection methods of college canteens'food safety,and test the surface cleanliness of tableware,the total number of bacteria in finished dishes,pesticide residues,veterinary drug residues and sulfur dioxide residues.After testing,the food safety of college canteens basically conforms to the regulations,and the sulfur dioxide residue of some dishes is high.
