摘要
试验将采自广西地区不同冷藏时间(24、48 h)的散户和牧场中新鲜生水牛乳进行宏基因组测序,分析生水牛乳在存储过程中嗜冷菌多样性。结果表明,在属和种水平上,冷藏24、48 h生水牛乳主要的优势嗜冷菌组成相同,但相对丰度存在差异。主坐标分析表明,不同冷藏时间嗜冷菌在种水平上菌群结构相似。聚类分析结果表明,生水牛乳样品中嗜冷菌在属和种水平上构成在组内个体差异较大。生水牛乳中具有潜在危害的嗜冷菌包括荧光假单胞菌、霉实假单胞菌、隆德假单胞菌、韩国假单胞菌、鲍曼不动杆菌、约翰不动杆菌、Acinetobacter guillouiae和蜡样芽孢杆菌等。研究表明,试验有助于发现广西地区生水牛乳中嗜冷菌污染的现状,可为控制生水牛乳中主要嗜冷菌提供参考。
Metapomic sequencing was conducted on raw buffalo milk collected from individual households and farms with different refrigeration time(24,48 h)in Guangxi,and the diversity of psychrophilic bacteria during storage was analyzed.The results showed that at the genus and species levels,composition of the dominant psychrophilic bacteria was the same in 24,48 h,but their relative abundance was different.Principal coordinate analysis showed that the microbial community structure of psychrophilic bacteria at the species level was similar at different refrigeration times.The clustering analysis results indicated that there were significant individual differences in the composition of psychrophilic bacteria at the genus and species levels in the raw buffalo milk samples within the group.The potentially harmful psychrophilic bacteria in raw buffalo milk included Pseudomonas fluorescens,Pseudomonas fragi,Pseudomonas koreensis,Acinetobacter baumannii,Acinetobacter johnsonii,Acinetobacter guillouiae,Bacillus cereus,etc.The experiment indicates that the experiment is helpful to find the current situation of psychrophilic bacteria contamination in raw buffalo milk in Guangxi,which can provide reference for the control of the main psychrophilic bacteria in raw buffalo milk.
