摘要
目的了解绍兴地区鲜冻水产品中铅、镉、汞、砷、铬、铜和镍污染水平以及含量变化趋势。方法采用国家标准检测方法检测,按《食品中污染物限量》(GB2762-2017)评价检测结果,采用单因子污染评价指数法评价污染程度。结果共采集2171份鲜冻水产品,铜检出率最高,为98.13%(526/536),均值为8.28mg/kg,镉超标率最高,为7.78%(169/2171)。对比7类水产品各元素均值,淡水甲壳类中汞(0.0398mg/kg)、铬(0.151mg/kg)均值最高;海洋甲壳类中镉(1.01mg/kg)、砷(4.67mg/kg)、铜(20.4mg/kg)、镍(0.402mg/kg)均值最高;腹足类中铅(0.318mg/kg)均值最高。甲壳类水产品中镉Pi均值为1.05,处于重度污染值水平;双足类、腹足类、头足类水产品中镉Pi均值为0.200,处于轻度污染值水平;其他鲜冻水产类(除鱼类、甲壳类、双壳类)中铅Pi均值为0.318,处于轻度污染值水平。结论绍兴地区鲜冻水产品中存在有毒元素污染,其中甲壳类水产品受到严重的镉污染,海洋甲壳类镉超标情况最为严重。有关部门不仅要加强对水产品中有毒元素的监测和分析,还需要加强水质检测、关注水资源的污染情况。
Objective This paper aims to investigate the pollution levels and content trends of lead,cadmium,mercury,arse-nic,chromium,copper and nickel in fresh and frozen aquatic products in Shaoxing.Methods The national standard detection method was used to detect the seven elements in fresh frozen aquatic products.The results were evaluated according to GB 27622017 Limits of Contaminants in Food,and the contamination level was evaluated by single factor pollution evaluation index method.Results A total of 2171 fresh and frozen aquatic products were collected.The mean value of copper with the highest detection rate of 98.13%(526/536)was 8.28 mg/kg.The highest over-standard rate of cadmium was 7.78%(169/2171).Compared with the mean values of the elements of the seven kinds of aquatic products,the highest mean values were mercury(0.0398 mg/kg)and chromium(0.151 mg/kg)in freshwater crustaceans.The highest mean values were cad-mium(1.01 mg/kg),arsenic(4.67 mg/kg),copper(20.4 mg/kg),and nickel(0.402 mg/kg)in marine crustaceans.And the highest mean value was lead(0.318 mg/kg)in gastropods.The Pi mean value of cadmium in crustacean was 1.05 mg/kg,indicating a severe pollution level.The Pi mean value of cadmium in biped,gastropod and cephalopod was 0.200 mg/kg,indicating a mild pollution level.And the Pi mean value of lead in other fresh frozen aquatic products(excluding fish,crustaceans,bivalves)was O.318 mg/kg,indicating a mild pollution level.Conclusion The contamination of the seven elements in fresh frozen aquatic products exists in Shaoxing.Crustacean are seriously contaminated with cadmium.Marine crus-tacean had the highest over-standard rate with cadmium.Relevant departments should not only strengthen the monitoring of the heavy metals in aquatic products,but also strengthen water quality testing and attention to the pollution of water resources.
