摘要
研究旨在探究缩合单宁对肉羊生长性能、屠宰性能、肉品质及抗氧化能力的影响。选取27只杜寒杂交(杜泊羊×小尾寒羊)母羊,随机分成3组,每组9个重复,每个重复1只羊。对照组羊饲喂基础饲粮,低剂量组和高剂量组分别在基础饲粮中添加39.47、78.94 g/kg的缩合单宁。试验期60 d。结果显示,低剂量组肉羊末重、平均日增重、平均日采食量均显著高于对照组(P<0.05),料重比显著低于对照组(P<0.05);高剂量组肉羊平均日采食量显著高于对照组(P<0.05)。低剂量组肉羊GR值、胴体重显著高于对照组(P<0.05)。低剂量组和高剂量组羊肉pH_(24 h)值、内聚性、咀嚼性显著高于对照组(P<0.05)。低剂量组羊肉滴水损失率显著低于对照组(P<0.05),蒸煮损失显著高于对照组(P<0.05)。低剂量组肉羊血清总氧化能力(T-AOC)及超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、谷胱甘肽过氧化物酶(GSH-Px)活性均显著高于对照组(P<0.05),丙二醛(MDA)含量显著低于对照组(P<0.05)。高剂量组肉羊血清CAT活性显著高于对照组(P<0.05)。研究表明,饲粮中添加39.47 g/kg缩合单宁可提高肉羊生长性能及抗氧化能力,改善屠宰性能及肉品质。
The aim of the study was to investigate the effect of condensed tannins on growth performance,slaughter performance,meat quality and antioxidant capacity of mutton sheep.A total of 27 Duhan hybrid(Duper sheep×smalltailed Han sheep)ewes were randomly divided into three groups,with nine replicates in each group and one sheep in each replicate.Sheep in control group were fed with a basal diet,sheep in low-dose group and high-dose group were fed with a basal diet supplemented with 39.47 and 78.94 g/kg condensed tannin,respectively.The experiment lasted for 60 d.The results showed that final weight,average daily gain and average daily feed intake in the low-dose group were significantly higher than those in the control group(P<0.05),and the feed to gain ratio was significantly lower than that in the control group(P<0.05).The average daily feed intake of the high-dose group was significantly higher than that of the control group(P<0.05).The GR value and carcass weight in the low-dose group were significantly higher than those in the control group(P<0.05).The pH24 h value,cohesiveness and mastication of mutton in the low dose and high-dose groups were significantly higher than those in the control group(P<0.05).The drip loss rate of mutton in the low-dose group was significantly lower than that in the control group(P<0.05),and the cooking loss was significantly higher than that in the control group(P<0.05).The T-AOC,activity of SOD,CAT and GSH-Px in the serum of mutton sheep in the low-dose group were significantly higher than those in the control group(P<0.05),and the content of MDA was significantly lower than that in the control group(P<0.05).The serum CAT activity of the high-dose group was significantly higher than that of the control group(P<0.05).The study indicates that the dietary 39.47 g/kg condensed tannins can improve the growth performance,antioxidant capacity,slaughter performance and meat quality of mutton sheep.
