沾化冬枣特征品质综合评价 被引量:2

Comprehensive Evaluation of Characteristics and Quality of Zhanhua Winter Jujube

摘要 为全面系统地分析山东沾化冬枣的营养成分和品质特征,以陕西大荔、山西临猗、河北黄骅4个主产地的样品作为对比进行综合分析,测定其单果质量、维生素C、总多酚、总黄酮、钙、钠、镁、磷、钾、锰、铜、可食率、含水量、可溶性固形物、可溶性糖、硬度以及固酸比,并采用相关性分析、主成分分析及聚类分析法对其进行综合评价,筛选特征指标,最终根据沾化冬枣的特征指标,探讨其对沾化冬枣产地溯源的可行性。结果表明,沾化冬枣的可食率、单果质量、总黄酮以及镁、磷、钾含量较高;主成分分析综合得分结果表明山东沾化是冬枣的优势产区;结合主成分分析和聚类热图分析将17项品质指标简化为可溶性固形物、总黄酮、可食率、镁4项具有代表性的特征指标;Fisher判别分析显示4个特征指标可作为4个冬枣主产区产地溯源的品质指标,且对冬枣产地整体正确判别率为92.3%,交叉检验正确判别率为82.1%,对沾化冬枣的判别率为100%,为沾化冬枣品质评价和核心品质指标的确定提供了依据,在沾化冬枣的产地溯源中具有重要意义。 In order to comprehensively and systematically analyze the nutritional composition and quality characteristics of Shandong Zhanhua winter jujube,the weight of single fruit,vitamin C,total polyphenols,total flavonoids,calcium,sodium,magnesium,phosphorus,potassium,manganese,copper,edible rate,water content,soluble solids,soluble sugar,hardness and solid-acid ratio were determined by taking Dali in Shaanxi,Linyi in Shanxi and Huanghua in Hebei as comparison.The method of correlation analysis,principal component analysis and cluster analysis were used to comprehensively evaluate it,and the characteristic indexes were selected.According to the characteristic indexes of Zhanhua winter jujube,the feasibility of tracing the origin of Zhanhua Dongzao was discussed.The results showed that Zhanhua winter jujube had the highest edible rate,single fruit weight,total flavonoids,magnesium,phosphorus and potassium contents.The comprehensive score of principal component analysis showed that Shandong Zhanhua was the dominant producing area of winter jujube.Combining principal component analysis and cluster heat map analysis,17 quality indicators were simplified into four representative characteristic indicators:soluble solids,total flavonoids,edible rate and magnesium.Fisher discriminant analysis showed that the four characteristic indicators could be used as quality indicators for the traceability of the four main producing areas of winter jujube,and the overall correct discrimination rate for the origin of winter jujube was 92.3%,the correct discrimination rate for cross test was 82.1%,and the discrimination rate for Zhanhua winter jujube was 100%,which provided a basis for the quality evaluation of Zhanhua winter jujube and the determination of core quality indicators,and was of great significance in the origin traceability of Zhanhua winter jujube.
