天水地区花牛苹果主栽品种香气成分研究 被引量:2

摘要 香气成分是苹果品质和地理标志性产品的重要指标,分析天水地区主栽花牛苹果的香气成分构成,对科学鉴别花牛苹果品种和保护种质资源具有重要意义。本研究使用气相色谱质谱联用技术对天水地区4个花牛苹果主栽品种的挥发性化合物进行鉴定,用CRITIC权重法确定最适谱库匹配度,用主成分分析方法(PCA)进行特征香气成分分析。结果表明,标准谱库匹配度≥50%可作为香气化合物判定的依据,4个品种共鉴别出22种香气成分,其中酯类物质占比均在99%以上;主成分分析表明,‘俄矮二号’‘天汪一号’‘首红’和‘栽培二号’的特征香气成分分别有4、2、3、1种。 Aroma composition is an important indicator of apple quality and geographical agro-products.Analysis of the aroma composition of the main cultivars of Huaniu apples in the Tianshui area is of great significance for scientific identification of Huaniu apple varieties and conservation of germplasm resources.In this study,aroma compounds from four main cultivars of Huaniu apples in Tianshui were identified by gas chromatography-mass spectrometry(GC-MS),the optimum spectral library match was determined by CRITIC method,and the characteristic aroma components were analyzed by principal component analysis(PCA).The results showed that the matching index of standard spectral library≥50%could be used as the basis for the determination of aroma compounds,and 22 aroma components were identified in the four varieties,among which the percentage of esters was above 99%.The principal component analysis showed that there were four,two,three and one characteristic aroma components in‘Oregon Spur II’‘Tianwang 1’‘Red Chief’‘Grower 2’respectively.This study provided the data support for the identification of characteristic aroma components of Huaniu apples.
