摘要
应用液相色谱—质谱法测定食用盐中的丙烯酰胺残留量。将乙腈作为食用盐中丙烯酰胺的提取溶液,用正己烷除脂,取下层清液旋蒸浓缩至近干,加1 mL水复溶,经0.45μm水系滤膜过滤得到待测液。采用液相色谱—质谱的多反应离子监测模式测定,内标法定量。结果显示,丙烯酰胺在5~1000 ng/mL范围内有良好的线性关系,且方法的精密度和回收率符合相关标准要求。该方法操作过程简单,重现性好,可满足实验室日常测定食用盐中丙烯酰胺的任务要求。
Determination of residual acrylamide in edible salt by LC-MS.Acetonitrile was used as the extraction solution of acrylamide in edible salt,degreased with hexane,the subnatant was collected and concentrated to near dryness by rotary evaporation.Water of 1 mL was added to the residue,and the test solution was obtained by 0.45μm water filtration membrane.Acrylamide was measured by MRM mode and quantified by internal standard method.The result showed that acrylamide has a good linear relationship in the range of 5 ng/mL to 1000 ng/mL,and the precision and recovery of the method met the requirements of relevant standards.The method is easy to oper-ate and has acceptable reproducibility,which can meet the daily task requirements of the laboratory for the determination of acrylamide in edible salt.
