山楂果胶低聚糖添加对婴儿配方乳粉贮藏的影响

摘要 为探究果胶低聚糖(POS)添加对婴儿配方乳粉储藏特性的影响,该研究以新鲜山楂为材料,通过热水浸提法获得山楂果胶,经果胶酶酶解获得POS,分离纯化后,收集不同聚合度的POS,将其按不同配比加入乳粉中,并采用色差仪、水分活度仪以及荧光分光光度计对乳粉加速贮藏后的物化性质进行比较研究。结果表明,样品POS(1~4)和FOS能够促进乳粉中荧光性AGEs的形成,样品POS(5~7)和POS(8~11)能有效抑制乳粉中荧光性AGEs的形成。这一研究结果为POS在食品中的开发和应用提供理论基础。 In order to explore the effects of hawthorn pectin oligosaccharide(POS)addition on the storage properties of infant formula milk powder,the fresh hawthorn was used as the material in this study,hawthorn pectin was obtained by hot water extraction,pectin oligosaccharides were obtained by enzymolysis of pectinase,the oligosaccharides with different polymerization degrees were collected after separating and purifying,then these oligosaccharides were added into the milk powder with different ratios.The physical and chemical properties of milk powder after accelerated storage were compared by colorimeter,water activity meter and fluorescence spectrophotometer.The results showed that the samples POS(1~4)and FOS promoted the formation of fluorescent AGEs in milk powder,while the samples POS(5~7)and POS(8~11)effectively inhibited the formation of fluorescent AGEs in milk powder.This study will provide a theoretical basis for the development and application of POS in food.
