现代检测技术在白酒真实性鉴别中的应用研究进展 被引量:1

摘要 白酒的真实性是白酒行业发展和消费者权益的基本保障,传统鉴别方法依赖品酒师个人经验进行评定,存在主观性强、准确度低、处理样本能力弱的不足。现代检测技术利用先进检测设备和先进检测方法对白酒真实性进行鉴别,提高白酒真实性鉴别稳定性和高效性。详细综述光谱、色谱、质谱等现代检测技术在白酒真实性鉴别中的应用研究现状,对比传统技术与现代检测技术优劣势,并展望现代检测技术未来发展方向,为白酒真实性鉴别提供借鉴。 The authenticity of Baijiu is the basic guarantee for the development of Baijiu industry and the rights and interests of consumers.The traditional identification methods rely on the personal experience of wine tasters for evaluation,which has strong subjectivity,low accuracy and weak sample handling ability.Modern detection technology uses advanced detection equipment and advanced detection methods to identify the authenticity of Baijiu,and to improve the stability and efficiency of Baijiu authenticity identification.The application of spectrum,chromatography,mass spectrometry and other modern detection technologies in the authenticity identification of Baijiu is reviewed in detail.The advantages and disadvantages of traditional technology and modern detection technology are compared,and the future development direction of modern detection technology is prospected to provide reference for the authenticity identification of Baijiu.
