浙江地区中华绒螯蟹中甲基汞分布特征与食用风险 被引量:1

摘要 为了研究浙江地区中华绒螯蟹中甲基汞的分布特征与食用风险,在浙江主要养殖地区的养殖场设点抽样,利用LC-AFS6000液相色谱原子荧光联用仪检测样品可食部分中的甲基汞含量。结果表明,中华绒螯蟹的蟹肉中甲基汞含量明显高于蟹黄中的甲基汞含量,蟹肉中的甲基汞含量远小于0.5 mg/kg,吴兴乔溇采样点的蟹肉中甲基汞含量最高达到0.043 mg/kg。综上所述,浙江地区中华绒螯蟹符合国家相关要求,可以放心食用,同时建议对甲壳类动物中重金属甲基汞限量作更细的区分和说明。 In order to study the distribution characteristics and consumption risks of methylmercury in Chinese mitten crab in Zhejiang region,this paper set up sampling points in the aquafarms in main breeding areas of Zhejiang,and detected the content of methylmercury in the edible part of the samples by using LC-AFS6000 liquid chromatography atomic fluorescence spectrometer.The results showed that the content of methyl mercury in the crab meat of Chinese mitten crab was significantly higher than that in the crab roe,and the content of methylmercury in the crab meat was far less than 0.5 mg/kg.The content of methylmercury in crab meat from Qiaolou sampling points in Wuxing District was the highest,reaching 0.043 mg/kg.In summary,the Chinese mitten crab in Zhejiang region met the relevant national requirements and could be consumed with confidence.At the same time,it is recommended to make a more detailed distinction and explanation of the limit for the heavy metal methylmercury in crustaceans.
