摘要 微生物污染会导致食物中毒和传染病暴发,从而严重威胁消费者的健康和食品行业的可持续发展。传统微生物检测方法,如培养法和生物化学检测等,虽已被广泛应用于食品工业,但面临着耗时长、灵敏度低和特异性有限等局限。随着科技的进步,分子生物学方法、纳米技术和生物传感器等先进方法,正在逐渐改变食品微生物检测的格局。文章就食品微生物的种类、检验标准方法及高级检测技术等展开深入探讨,以期为食品微生物的全面检验提供指导,推动食品安全技术的持续进步。 Microbial contamination can lead to food poisoning and outbreaks of infectious diseases,posing a serious threat to consumer health and the sustainable development of the food industry.Traditional microbial detection methods,such as cultivation and biochemical detection technologies,are widely used in the food industry,but face limitations such as long processing time,low sensitivity,and limited specificity.With the advancement of technology,new methods such as molecular biology,nanotechnology,and biosensors are changing the pattern of food microbiology detection.This paper conducts in-depth discussions on the types of food microorganisms,standard methods for inspection,and advanced detection technologies,in order to provide comprehensive guidances for food microbiology inspection and promote sustainable progress of food safety technology for the food industry.
