摘要
针对瓜胶原粉抗盐性差的问题,通过化学改性制得耐盐瓜胶,并用红外光谱仪对产物进行了结构表征。进一步考察了相对分子质量、粒径、搅拌转速、温度、盐离子等对其溶胀性能影响。结果表明:制备的耐盐瓜胶相对分子质量越小、粒径越小,速溶性能越好;相对分子质量和粒径过小均会导致耐盐瓜胶增黏性降低。搅拌速度和温度增加均有助于溶解。一价离子相对于二价离子对耐盐瓜胶的溶胀增黏性影响较小,SEM观测不同盐溶液中耐盐瓜胶分子的构型有差别。合成的耐盐瓜胶具有一定的耐盐性,速溶性较好,可适用于海上连续混配液需求。
In response to the problem of poor salt resistance of melon collagen powder,salt resistant melon gum was prepared by chemical modification,and the structure of the product was characterized by infrared spectroscopy.Further investigation was conducted on the effects of molecular weight,particle size,stirring speed,temperature,and salt ions on its swelling performance.The results showed that the smaller the molecular weight and particle size of the salt resistant guar gum prepared,the better its instant solubility performance;Both small molecular weight and particle size can lead to a decrease in the viscosity of salt resistant guar gum.An increase in stirring speed and temperature both contribute to dissolution.The effect of monovalent ions on the swelling and viscosity of salt tolerant guar gum is relatively small compared to divalent ions,and SEM observation shows that the configuration of salt tolerant guar gum molecules varies in different salt solutions.The synthesized salt resistant guar gum has a certain degree of salt resistance and good instant solubility,making it suitable for continuous mixing and liquid preparation requirements at sea.
