摘要
目的分析2015—2022年重庆市江津区食品安全风险监测结果,发现存在的食品安全隐患,为制定有针对性的预防措施提供依据。方法根据《重庆市食品安全风险监测工作手册》时间和环节要求,2015—2022年在重庆市江津区范围内饭店、超市(便利店)、农贸市场等居民日常消费量较大的场所随机抽取食品样品,检测卫生指示菌和致病菌指标。采用χ^(2)检验对超标率、检出率等指标进行检验,检验水准为α=0.05。结果2015—2022年重庆市江津区监测的870件食品样品中27件样品微生物指标超标,样品超标率3.10%。超标样品主要为卫生指示菌超标(26件,占超标样品的96.30%)。6种卫生指示菌中大肠菌群超标率最高(4.81%),11种致病菌中蜡样芽胞杆菌检出率最高(2.29%)。散装样品与预包装样品微生物超标率差异无统计学意义(χ^(2)=0.053,P=0.818)。餐饮服务环节样品微生物超标率高于流通环节(χ^(2)=10.719,P=0.001)。结论江津区监测食品中,冲调谷物制品超标率较高和蜡样芽胞杆菌检出率较高的问题值得重视。
Objective To analyze the monitoring results of foods in Jiangjin District of Chongqing from 2015 to 2022,and to identify the existence of food safety hazards,and to provide a basis for formulating targeted preventive measures.Methods According to the time and process requirements in working manual of food safety risk monitoring of Chongqing,foods were randomly sampled in places with high daily consumption such as restaurants,supermarkets(convenience stores),and farmers'markets to detect hygiene indicator bacteria and pathogenic bacteria.Chi-square test was used to test the overstandard rate and detection rate,andα=0.05 was used as the test level.Results About 27 samples had microbial indicators exceeding the limit among the 870 food samples,with a sample exceeding limit rate of 3.10%.The main samples were exceeding the limit in hygiene indicator bacteria(26 pieces,accounting for 96.30%of the exceeding limit samples).The coliform group had the highest exceeding rate(4.81%)among the 6 types of hygiene indicator bacteria.Bacillus cereus had the highest detection rate(2.29%)among the 11 pathogenic bacteria.There was no statistically significant difference in microbial exceeding rate between bulk samples and pre-packaged samples(χ^(2)=0.053,P=0.818).The rate of exceeding limit in the catering process was higher than that in the circulation process(χ^(2)=10.719,P=0.001).Conclusions The high exceeding rate of blended grain products and the high detection rate of Bacillus cereus in monitored food in Jiangjin district should be paid attention to.
